
At the beginning of the 20th century, Louis Gabiati set out to find a climate identical to that of Northern Italy. On his journey, Louis discovered the city of San Francisco, one perfectly suited to the salame process and cultural tradition. It was there that he founded the Gallo Salame company.
Louis Gabiati believed that all good things came in good time. For him, creating Gallo Salame brand Italian Dry Salame was an art. He took the time to hand select the finest ingredients available and then the time to age and ferment the salame - just like the traditions. This was his passion. Today, Gallo Salame brand Italian Dry Salame products are exclusively produced in San Lorenzo of the San Francisco Bay area by Galileo Foods.
